Smoking a turkey for Thanksgiving is a great way to elevate a traditional meal and add deep, rich flavor to the centerpiece of your table. While roasting is common, smoking creates a juicy inside, lightly crisp skin, and a subtle wood-fired taste that makes the bird far more memorable. The key is preparation, temperature control, and patience.
Start with a fully thawed turkey. This is a step many people underestimate, but it is critical for even cooking. A frozen or partially frozen bird will cook unevenly and take much longer to reach a safe internal temperature. Once thawed, remove the neck and giblets and pat the turkey dry.
