Alligator and Hog Roasting

Roasting an alligator and a hog together delivers a bold, flavorful centerpiece that’s perfect for large gatherings or special events. To get it right, preparation and patience are key.

Start with the alligator. It’s best to brine it overnight in a saltwater mix to help keep lean meat juicy. If a cooler that large is tough to find, you can still brine it in sections or line your container with plenty of ice. Once it’s good and cold, season it with a Creole or Cajun rub and smoke it at around 250°F. Be sure to mop it every hour with a mix of apple juice, cola, or bourbon and glaze it toward the end of the cook with your favorite BBQ sauce. The meat is ready when the tail’s internal temperature hits about 155 degrees.

For the hog, choose an animal under 90 pounds for tender meat and manageable cooking. Secure it to a spit or roast box and cook using indirect heat. Rotate and monitor it steadily to keep even cooking. In the final half-hour, crank up the heat for that golden, crackly skin that makes a hog roast unforgettable.

Here’s a tip one cook gave for top results: “The secret ingredient here is time and smoke for perfectly cooked gator” (GrillGirl). That sums up what this kind of roast is all about.

Timing is important. Many cooks roast the alligator and hog separately, so both are done just right. The alligator typically takes around five hours to smoke, while the hog may take several more, depending on size. Rest both meats before carving to lock in juices.

Together, slow-roasted alligator and hog offer both bold flavor and impressive presentation. With careful brining, seasoning, temperature control, and the willingness to let time do its work, you’ll deliver an unforgettable roast.
